DESCRIPTION

High acyl gellan gum is light yellow powder and has the following properties:
1. Excellent elasticity after gelation
2. Good dispersion and hydration properties
3. Low protein reactivity and good acid stability
4. Good pseudoplasticity endows the product with good taste
 
Often used in non-transparent drinks or food: dairy products, coarse food grain drinks, vegetable protein drinks, fresh fruit juice or vegetable juice drinks, health drinks, meat products, etc. It can also be mixed with CMC, guar gum, microcrystalline cellulose, pectin, carrageenan and other colloid to broaden its application range.
